Raw cacao goji energy balls

Such and incredibly simple and delicious recipe, once again I dare you only to have one....

Recipe calls for
10 pitted dates 
Hand full of what ever nuts your desire, I used walnuts and almonds 
3 tbsp raw cacao powder
Handful of goji berries
Unsweetened shredded coconut 
Tbsp instant espresso 

Blend all ingredients except for the coconut and gojis 
Then mix in gojis
Role into balls 
Coat in coconut 
Place in freezer
EAT.....THATS ALL TO IT!!


Raw million dollar shortbread cheesecake

I've recently been inspired to jump back onto the raw food train, I'll admit I attempted it a while back but I wasn't keen on the concept of such nutty foods, not being a huge nut fan. Ohhhh how times have changed, I'll happily snack on a zip lock bag full now, it takes serious control to not eat a bag at once.

Once going raw and doing a big of research you tend to realise hey I can eat this and not feel guilty and really taste the nutrients in the sweet foods. The last two days now I've spent researching many different recipes and I cannot wait to make them! I'll admit it's not cheap but the out come lasts a loooonnnnngggggg time. 

So yesterday I made my second raw cheesecake, the first one being a while back and not a complete fallout but the taste was not fabulouse,.. But this one wooooooweeeeeeeee it's amazing and needed serious control not to go back for more... Because you have to REMEBER all though they are incredibly good for you it's pretttty calorie dense due to the nuts used... But still soooo incredibly nutritious. 

I cam across the million dollar shortbread recipe calling for the use of almond butter for the cream, but I thought I would recreate it and make a cheese cake, substituting the almond butter for PB2 not making it as calorie dense and also a lot lighter, resembling a cheesecake. 

The outcome was PPPEERRRFECT 

this is my "million dollar cheesecake" a recipe I adapted and made my own.

For the base 
-1 cup ground cashews 
-1/4 cup cashew butter 
-1/4 cup melted coconut oil
-3 packets of sweetner (natvia) 
-2tbsp Waldens farms maple syrup (zero calorie)
-1-2 tbsp water 

Blend all base ingredients in food processor then place in the bottom of a spring form cheesecake pan 

For the cream/caramel 
-1/2 cup melted coconut oil
-1/2 cup of Waldens farms maple 
-1/3 cup pb2
-1tsp vanilla extract
-pinch of salt 

Once again blend all ingredients in food processor and pour over base

For the raw chocolate 
-1/2 cup melted coconut oil
-1/2 cup raw cacao powder 
-1/4 cup maple 
Melt over a double boiler until smooth and then pour over caramel.. For the marble effect grab a tooth pick and swirl till you get the pretty look you want.
Place in freezer for a couple of hours before slicing and devouring!!! I dare you not to go back for another peice!!

Blueberry birthday cake protein mug cake!

Nothing much needs to be said, this recipe is faultless, simlple. Low in carbs  and packed full of protein! Oh and a hugggeeeee serving. I struggled.

Recipe calls for:
1 scoop of whey protein I used about time birthday cake
1 tbsp coconut flour
1 egg white
1 to 2 tbsp almond milk until mix able
1 tbsp mashed banana
Sweetner to taste
Handful of blueberries
1/2tsp Baking powder


Method.
Mix all ingredients together in a bowl besides blueberrys
Then in a mug put a layer of mixture in then top with blueberrys then add remaining batter.
Cook in microwave for 1-2 minutes and watch the magic happen!

That's it!! You can add more mashed banana to add moistness to the cake

Sharing the love through food

I've been so lazy with recipes lately, not putting much effort into my food at all, purely because I've been absolutely flat out putting effort into other peoples food through my cake business, pumping out 6 cakes last week.. Finally finishing today! Crazy how much standing on your feet rolling fondant out can take it out of you, but it's my passion and I love it.

Yesterday I took place in the city to surf 12km run, to raise money for active, a foundation that is really close to myself and my family. I'm not going to lie I was incredibly stressed out about running, not tbinking or having any faith in myself at all that I would be able to do it. Until the amazing boy in my life told me other wise. He truely helped me with my decision and was literally there with me while I was running following me.

Annnyyywayyyyy after running 12kms It was a chance to have a cheat meal/dessert, nothing extraordinary but a cherry ripe mcflurry something I've been craving for a long time, it was great but I was keen to get back into the healthy-ness of fresh food. Sooooo today I decided to whip up protein Crepes for me and Brody, while he was still napping.

I was worried about this recipe, considering I've never attempted Crepes before and kinda winged it buttt WOOOAHHHHHH they were pretty fab! Probably on the menu for tomorrow's post workout breaky... Completely gluten free, dairy free and sugar free.

I'm warning you! You'll want ant more than one!

These are my cookies and cream protein Crepes

Ingredients.
-1 scoop cellucor cookies and cream whey
2 eggs whites 
Almond milk too desired runny deliciousness 
1tbs spelt flour

Method: 
Simply cook on greased skillet and flip carefully when allll bubbled up, this recipe makes about 4-5 delicious funny sized circles. 


Fill with what ever you desire!!!

Banana
Strawberry
Kiwi fruit
Maple syrup
Chocolate sauce 
Yoghurt 
Pb2!!

Mmmmmmm cookie dough

Drool drool drool, take me back to those days where I would eat raw cookie dough from that little tube that mum would get from the shops, that little tube that you could actually see the crystallised sugar glistening away on the light, pretty sure it's what subway uses, that's why their cookies taste SO FKN GOOD!

No need to resort back to those old habits with this incredibly tasty, healthy and easy cookie dough. Once you've tried it you'll never return to all that sugar!!! Not even with the chocolate on top!!

It took me a while to perfect this recipe, as it was pretty hard to get the right texture and consistency, whether it needed less or more liquid it's safe to say its pretty perfect and so versatile for flavours!!

Recipe calls for
1 cup of crushed weetbix YES WEETBIX! Or spelt flakes
3/4 cup unsweetened almond milk
2 sweetners 
1 and a bit tsp of vanilla extract and some salt


Method:
WIZ IT UP IN A BLENDER! Set in fridge, the linger you leave it the thicker it gets and more like cookie dough

When you take it out give it a stir and fluff up. Top with cocoa nibs and sugar free chocolate.

Tropical cinnamon swirl eggy protein pancakes

Tropical cinnamon swirl eggy protein pancakes ( insert breathe here) 
I was absolutely starving when I thought of this recipe/flavour I really wanted them straight away and couldn't be bothered making any thing too difficult. 

These pancakes arent the most difficult but they are super when it comes to flavour, super low fatty and high on protein. The cinnamon aids in that morning metabolism boost that all you fittness junkies yern for in the morning, and hey who doesn't love fruit. If you don't love fruit in my eyes your an idiot, except for my best friend I love her... 

Anyway, these are probably my favourite flavour and when the at accompanied by sugar free maple, they instantly turn into doughnuts. 

WHATT DOUGHNUTS FOR BREAKY! Yes I'm not lying people. Don't be afraid of the eggwhites, they are doughnuts... Give them a chance

Did I mention they are incredibly high in fibre??? All thanks to the husk.. Phsyllium husk that is... Helps to get ya moving in the morning and feeling light throughout the day ;) 

Annnyywayys recipes calls for..

3 egg whites 
1 scoop of cellucors cinnamon swirl protein
2 tablespoons of that husky stuff
1 sweetner
1/2 tsp  bi carb and baking powder 
As much cinnamon as you want.. I always want lots!

Method to the MADNESS!
- blend It all up 
- Cook on low heat, usually makes about 6-8 good size eggy pancakes creating a beautiful stack of lushness 

Topped with so much yummy fruit and maple if your feeling 
Ike some doughnuts in the morning...

Oaty ANZACS

Anzac biscuits are probably one of my alltime favourite cookies, ever since I was little I've always been a sucker for old fashioned cookies and biscuits, I have my nan and grandma to blame for that. Everytime I was at either of their houses there was always Anzacs, Ginger snaps and rock cakes located in that unreachable jar ontop of the counter just waiting to be eaten.

My grandmas rock cakes were literally to die for, I've never been able to perfect her recipe, she had this special way of making every single one taste Better than the last. I wouldn't say that they were the best for you, but they made you feel happy whilst eating them.

Soooo the other day I was asked to make Anzacs, of course I agreed to it. But then I realised how unhealthy they really are, how much sugar they contain, really cancels outs the goodness of the oats.

So being true australian patriot I am I decided to clean up the recipe..kinda winging it and hoping for the best result.

They turned out a lot better then I thought, with no added sugar I thought they would have tasted like wood, but I was pleasantly surprised, and they were very much appreciated.


These are my "oaty australian ANZACS"

Recipe calls for:
125 grams of vegan butter alternative 
( OH DID I MENTION THEY ARE VEGAN?!)
2 tablespoons of Waldens farms calorie free maple syrup 
2 tablespoons of boiling water 
1/2 tsp bicarbonate soda
1 1/4 cup of spelt flour 
1 cup rolled oats
1 cup organic shredded coconut
2 natvia packets 

Methode:
Pre heat oven to 160 degrees fan forced
Melt butter and maple syrup in pan on low heat
Mix dry ingredients besides bicarbonate soda in bowl
Combine bicarba and water.
Mix dry with wet
Roll into 15 equal size balls and flatter out on two baking trays 
Bake for 15 minutes or until golden
Let cool
